Looking for Peter Piper

I have 6 kilos of hot peppers. Not small chilli peppers but not capsicum. Not sure what you call them, they're long and almost triangular in shape. It's a mix of red and green. I have already diced and frozen some for some zing in winter cooking but I'm looking for ideas for the rest.. chilli sauce? hot sauce? pickled peppers? Would love any ideas!

Last year we made our own tobasco sauce and it was a HUGE hit with all the customers. It wasn't red and all liquid like the tobasco brand (pretty chunky) but really easy to make. Peppers, salt, and vinegar.

Also, Tomoe used some to pickle her nozawana. THAT was a huge hit with me. I generally hate all the neighbors sugar-filled nozawana pickled, so I was reluctant to eat it when Tomoe put it out, but one bite and I couldn't stop. Day in day out. My weekly Star-Chip bill was cut by 100%.

How about some salsa? Use a few on some pizzas. Are they big enough to be stuffed? Maybe sun-dry some?

I agree - make salsa, freeze them, pickle them, AND dry them!
